Absinthe

Absinthe Singapore2
Bukit Pasoh, I was told by Hairy, is the trendy, newest area in Singapore where many good restaurants have opened at the start of this year.

Absinthe looks quiet and unassuming from the outside, but stepping inside you will see that even on a weekday, the place gets filled up around dinner time, pretty quickly.

When I get there, Hairy and XLB are already sipping champagne. A platter of starters sits before them.

DSC01076
Oh, how did they guess? This is one of my favourite starters.
Iberian ham, also called pata negra, is a type of cured ham produced only in Spain.

Absinthe Singapore3
Apparently the finest iberico is called jamon iberico de bellota (acorn). This ham is from free-range pigs that roam oak forests along the border between Spain and Portugal, and eat only acorns during this last period. The exercise and the diet have a significant impact on the flavor of the meat - the ham is cured for 36 months.

I am not sure which iberico we had that night, but I sure hope it was the acorn eating sort. Actually from the generous amount of intramuscular fat, smooth texture and the rich, smoky, savoury flavour, I would guess probably, top grade. Anyway, the handsome Chef Francois Mermilliod did an excellent job carving it!

Also, when Hairy heard that the degustation menu had recently been changed, he hardly needed much persuasion to try it.
The Degustation menu consists of five dishes - three starters, a main and a dessert.

Sounds like the kind of mammoth eating challenge that Hairy loves to take on, if you ask me;)

The three starters were the Tartare of Hokkaido Scallops with Citrus, Wakame and Seaweed Tuile,
DSC01096
the Terrine of Foie Gras and Smoked Duck Breast with Herb Salad & Toasts,

DSC01115
and the Braised Kurobuta Pork Belly, Shimeji and a Fennel Salad, Star Anise Scented Jus.

We tried a bit of each and all were equally good. My favourite was the tiny morsel of pork belly - succulent, sweet flesh of the pig ,with just the right amount of melt in your mouth fat to give you small delightfully sinful mouthfuls of flavour, without overwhelming you.

Absinthe Singapore
The main of Grilled Grain Fed Beef Tenderloin Served with Parsnips Mash & Black Truffle Sauce. Cooked to perfection you can see the look on Hairy's face to know that it was good - he looked like a kid in a candy store;)

Here ends the first two parts of the degustation menu. Only dessert left to go. (Hairy said that he was still hungry and might consider supper later. I swear Hairy has four stomachs).

DSC01113
For the petite in size and appetite, there is always the Bouillabaisse. This is a classic French shellfish and fish stew. According to tradition, there should be at least five different kinds of fish in a proper bouillabaisse. In Marseille, considered the mecca of bouillabaisse, they use at least seven, not counting the shellfish! Anyway, the bouillabaisse was delicious.. if I closed my eyes, each mouthful transported me back to the city of Marseille, the first place I ever tried this stew.

DSC01135
Finally, dessert! The Coconut Panacotta with Jubilee of Fresh Berries was exquisite. The black dots you see are the authentic vanilla beans and that's what made this dessert a winner. Fantastic taste with the smoothest texture.

At this point there was further talk of going in search of a Hokkien mee supper, but I chose to dismiss the crazy ramblings...

Valrhona dark chocolates to cleanse the palate. Lovely!

Finally no meal would be complete without paying tribute to the namesake of the restaurant itself - Absinthe! The restaurant manager Philippe Pau, prepared it for us himself. Philippe has got to be one of the most knowledgable, charming managers I have had the pleasure of meeting. It is true what scientists say - Absinthe drinkers you are not hallucinating/seeing the green fairy.. you are just truly drunk! (with concentrations as high as over 70 percent, I can see why.) In just under 3 minutes, Philippe gave us the entire history, fact/fantasy lesson on Absinthe. Oh, he's good.

What does that greenish liquid taste like? It tastes like liquorice. For the complete way of preparing Absinthe, go here.

Anyway, we had a fantastic dining experience at Absinthe. We highly recommend this place to anybody who appreciates good French food!

I have run out of things to write so I will end by telling you that the three great French poets of the era, Charles Baudelaire, Paul Verlaine and Arthur Rimbaud, were all prodigious absinthe drinkers, although direct references to the drink in their poems are surprisingly rare.

By far the most prolific of all absinthe-influenced poets was Raoul
Ponchon (1848 - 1937). Originally a bank employee, he quit his job
after his father's death in 1871, and set himself up at the age of 23
in a garret with the words "Painter and Lyrical Poet" written on the
door. Ponchon was astonishingly prolific, writing
150 000 verses, of which over 7000 were about food and drink,
including many dealing specifically with absinthe.

Here is the English translated Sonnet de l’Absinthe, for your reading pleasure (may you be sipping absinthe as you read it!)

Absinthe, ô ma liqueur alerte,
Il me semble quand je te bois
Boire l’âme des jeunes bois
Pendant la belle saison verte.

Absinthe, O my lively liquor,
It seems, when I drink you

I inhale the young forest’s soul

During the beautiful green season.

Ton frais parfum me déconcerte
Et dans ton opale je vois
Des cieux habités autrefois
Comme par une porte ouverte.

Your perfume disconcerts me
And in your opalescence

I see the full heavens of yore,

As through an open gate.

Qu’importe, ô recours des maudits,
Que tu sois un vain paradis,
Sit tu contentes mon envie;

What matter, O refuge of the damned,
That you a vain paradise be,

If you appease my need;

Et si, devant que j’entre au port,
Tu me fais supporter la vie,
En m’habituant à la mort.

And if, before I enter the gate,
You make me put up with life,

By accustoming me to death.

RAOUL PONCHON

SAGE. The art of card making... paper, glue, crayons and lots of love

DSC09913

The 22nd of October... the day you came screaming and kicking into the world... you haven't stopped talking since:P

DSC00023

I make you a card.. because I am creative (and too lazy to buy one from the shop)!

DSC00008

You read the card and smile.. (OK la, I'm no poet but you get the gist of it.. lol)

We read about this place from Lemongrass and since we have always liked Cilantro (driving past micasa a few weeks ago, the whole place is still closed for renovations), we decided we just could not pass up a chance at trying Chef Kimura's cooking!

We opted for the Sage-Set because it was much more worth it than going ala-carte.

We start to eat.

You find the 'Extra Large Scallop with Slow Roasted Beet root and Kabu' appetizer a little over-cooked.. I find my 'Feuillete of Anago with Foie Gras and Artichoke Puree' starter delicious..

Both Appetizers are priced at RM58 nett each.

For mains I order the 'Rump Steak with Carrot Puree and Anchovy Sauce' and you have the 'Roasted Lamb Rack with Merguese and Piment'. The steak was excellent - the nice and unusual thing about this steak is that they serve you two types of beef. One is the actual steak medallions, medium rare and the second is the braised ox shank with the carrot puree. Excellent texture and taste. The lamb was gamy and a little on the fatty side. You noticed that you were served only ONE piece of a tiny lamb rack, and 1/4 of it was fat! Luckily my portion was huge, so you helped me with my steak.

Both Main Courses are priced at RM78 nett each.

DSC09956

You, sharing your lamb with me, what little you had.. aww... so sweet...

We eat, chat, linger, snap photos, laugh and eat some more.

After about an hour ,we are done.

DSC00029 DSC00030

For dessert, you have the 'Almond Blanc Manger with Mango Sorbet and Passion Fruit' and I have the 'Calvados Flambe of Apple with Almond Crumble and Vanilla ice-cream'.

Both were equally good but the Almond Manger stole the show. According to you, this was one of the best desserts you have tried in a while. The texture of the Manger was silky smooth and superbly creamy. This richness was nicely tempered with the tangy sourish sorbet and passion fruit.

Both desserts are priced at RM30 nett each.

DSC00014

We finish our food and take a breather. Out of the corner of your eye, you see the waiter walking over. You look quizzically at me. I grin back.

DSC00012

Haha... SURPRISE! Make a wish!

We eat the complimentary cake courtesy of Chef Takashi Kimura and call it a night..

Of course, the other birthday present is all wrapped up waiting at home for you, but you don't know that just yet;)

XOXO,

Ciki

2 coffee shops and a french restaurant

People keep telling me that there is nothing (good) to eat in JB. "YOU will be bored and hungry", that's what they say.

Well, I was lucky enough to get to eat at 3 different restaurants ,which were actually pretty good!

Me: "What's for lunch today?"
Friend:"We are going to fish".
Me:"You mean fishing?"
Friends in unison: "No... FISH!!!"

Affectionately known as FISH, Seng Steam Fish Restaurant is totally packed on any afternoon of the week during lunch hour.
This place use to be a shack, under a tree. However they recently moved to a cleaner, better more comfortable coffee shop environment, not too far from the old place.

<span class=
What can I say. These people really know how to cook fish.

Whilst the fried fish with mayo, sweet and sour sauce is heaven on earth,

<span class=

The steamed fish rocks the hell out of any other fish dish I have eaten in KL.

Very, very good.

There are other dishes too, but I have not posted them because whilst they are good, we can also get them in KL.

So, eat the fish! Don't miss out!

.
.
.

Next stop.. TEA,
at Soon Chiang!
Wow! JB people can really eat. My first meal is still digesting, but my mates assure me that it's time to eat again.

Bakuteh.

I look skeptical. Isn't the best Bakuteh found in Klang..?

10 minutes into the eating, I realise that, man, this bakuteh is really rather good. The sauce is as thick as blood, but the most outstanding thing is the amount of herbal ingredients they put into their cooking. This bakuteh has a strong pungent herbal aroma, boarding on bitter. It takes getting use to, but you'll get the hang of it. This thing is addictive.

No complaints here.

Hmmm, 2 out of 2. I wonder if JB will continue to impress...

.
.
.

What will the evening have in store, i wonder... :P

Welcome to... THE ZONE. Just like being in "the zone" eludes to being in some form of altered state of consciousness or other,
the booze here is so cheap, that many actually reach "the zone" far too quickly:P

This area, Stulang Laut (or more famously known as EDEN), has mushroomed into the most happening nightclub/party spot of JB.

Apparently the KTV lounges have an entry fee of RM2K, and no less.

No wonder the Benz and the BMW line the front porch of the clubs.

<span class=
Just look at this place. Opulence bordering on gaudy, if you ask me.

<span class=
Hasn't anyone told these people that Less is More.. sheesh..

<span class=
Anyways, we were here to have drinks at the trendy Cabana.

Wait a minute.. what's this....

There seems to be some pageant rehearsal going on.

Miss World? Miss Universe??
.
.
.

MANHUNT!!!

"I'm too sexy for my love, to sexy for my love... Loves gonna LEAVE me..."
(sung to the tune of that ridiculous 1992 song by Right said Fred)

"I'm a model and I do what i want, I shake my lil' Toosh on the catwalk... "

Hahahaha..

We had a grand old time.. we did. (laughing)

Too bad it was the rehearsal, apparently they take off their shirts on the "real night". Ooooo, we really wanted to see em without their Tee's on... (not)

:P

So, the finger-food here was so-so. Rather stale if you ask me.

The pizza we ordered from next door was just OK.. but better than the finger food.

However, the beer was nice. Went down well it did.

OK, so enough laughing (at other people's expense)... what's for dinner?
.
.
.

Me:"What's for dinner?"
Friend:"French".
Me:"French loaf? French toast? French fries?"
Friend"No, french!" (rolls eyes)

<span class=
Here is Chez Papa! I was surprised to say the least. I mean, I was happy with the way the day had panned out with the excellent Chinese food and all, but I really wasn't expecting fine dining, french style in JB.

<span class=
Oh, this place is cosy.

I like this place.

We should stay here for a bit:)

<span class=
Dominique Muller, the Chef, does a magnificent foie gras starter. There's nothing subtle about the taste of this dish. Each mouthful packs a punch, that knocks the air right out of your lungs, and makes you sit up and notice its heady liver aroma, shrouded in exquisitely silky textured bite-sizes.

Tres Magnifique.

<span class=
The Chez papa "sample" was an interesting starter as well, with a nice blend of the old favourites - salmon, mushroom, pickles and nuts.

<span class=
The Cod fish was delicious and at RM48, not too expensive either.
<span class=
The duck breast was tender and cooked just right.

<span class=
What a nice end to the night!
Great food, great company and that aged but reliable tipple.. heart-warming indeed :)
